Four Seasons Hotel Shanghai has welcomed Giovanni Speciale as it's newly appointed Ececutive Sous Chef. His most recent posting was at Four Seasons Hotel Bangkok where he was the Italian Chef for five years at its award-winning Italian restaurant, Biscotti.<\/p>\n
Speciale's responsibility is to mainly oversee to the daily operations of the western kitchens of Cafe Studio and Steak House. He will also be taking charge of all western cuisine of banquet and catering projects including themed parties and outside catering.<\/p>\n
Speciale's culinary career started in 1990 in Liguria, Italy as commis de Cuisine before he moved on to Baizi Rossi Restaurant, a 2 Michelin star restaurant as its commis de cuisine for 2 years. In 1992, he joined Valtur Hotel S.P.A. in Corfu', Greece as chef de Partie, followed by an assignment at another Valtur Hotel in Maldives which lasted for a year. He returned to Italy after a promotion within the company at another Valtur Hotel in Sicily and Sardinia where he stayed until 1994.<\/p>\n
Looking for a greener pasture outside the company, he accepted an offer to move to England as Sous Chef at the Tiggis Italian restaurant for almost a year. His first Asian sojourn was at the Rigoletto Italian Restaurant in Hong Kong as first Sous Chef and worked there for 3 years. This was followed by a stint in the Philippines, prior to moving to Bangkok.<\/p>\n
During his last posting at Four Seasons Hotel Bangkok, he was also part of the culinary team that participated in the 6th Annual World Gourmet Festival 2005 in Bangkok. The festival was a gathering of the world's best chefs, each showcasing his expertise and creative presentations.<\/p>\n
Born and raised in Martina Franca, Italy, Giovanni attended the Hotel Management School in Brindisi, Italy where he received a diploma in Hotel Management in 1986.<\/p>\n","protected":false},"excerpt":{"rendered":"
