A highlight of his career included an award as Manager of the Year in a five-star Australian resort, after successfully driving the profitability of its food and beverage operations.<\/p>\n<p><img decoding=\"async\" align=\"right\" alt=\"Nicholas Blair\" id=\"image2203\" title=\"Nicholas Blair\" src=\"http:\/\/www.chinahospitalitynews.com\/cn\/wp-content\/uploads\/060918-aria-blair.gif\" \/>Nicholas Blair brings to Aria his dynamic international background as the restaurant's new Chef de Cuisine, moving to Beijing from Hong Kong where he was previously working in one of the territory's leading five-star hotels, as Chef de Cuisine in a high-profile, modern seafood speciality restaurant. Born in Bangkok, Thailand and raised in Sydney, Australia by his Scottish-New Zealand father and Australian mother, Blair grew up with a fondness for the outdoors, and a love of fresh fruits and vegetables.
